Toast with avocado and hommus
Ingredients 2 slices of toast 1/2 an avocado 2 tbsp hommus 1 tbsp sunflower seeds 1/2 a lemon
Method Spread the toast with hommus Slice the avocado and arrange on top of the hommus Sprinkle with sunflower seeds Squeeze lemon juice over the top Serve with some rocket, mushrooms or tomato to add to your vegetable intake for the day.
Alternatively, replace the hommus with vegemite. If you can't do vegemite without butter, you can combine vegemite and peanut butter for a caramel flavour. It sounds weird but tastes delicious. Give it a try.
