This salad bowl is made from a salad layer, a stir fried vegetable layer, a bean layer, and topped with avocado. The ingredient list looks long, but can easily be modified to include the vegetables you have available. It's simply a matter of layering everything into a bowl once the vegetables have been prepared.
Ingredients
Roast sweet potato
1 sweet potato, cut into small cubes
a little oil to coat
a sprinkling of salt or Chinese five spice
The bean layer
1 can of black beans, rinsed
1 can of chopped tomatoes (or 200ml water)
1 tbsp apple cider vinegar
1 tsp cumin
1 tsp hot paprika (or sweet paprika if you like it mild)
1 tbsp honey
If you like it less 'beany' you can add in:
1/2 a grated zucchini
1 small grated carrot.
The vegetable layer
1 onion, cut into thin wedges
1 capsicum, sliced
Kernals from one cob of corn
You could also use:
Zucchini, cut into chucks (if not in the beans)
Broccoli chopped into small florets
The Salad layer
1/8 of a cabbage, shredded
1 carrot, shredded (if not in the bean mix)
¼ iceberg lettuce, shredded
½ a cucumber, cubed
1-2 tomatoes, cubed
1/3 cup coriander leaves
Lime juice, ¼ lime per person
Guacamole
1 avocado, mashed
juice of 1 lime
You can also add:
Chilli to taste
1 tbsp chopped coriander
Corn chips for serving.
Method
1. Preheat the oven to 200 C
Coat the sweet potato in oil and sprinkle with salt or five spice powder
Place the sweet potato on a lined tray and bake for 30 minutes or until soft and slightly browned.
2. Place the beans, tomato (or water) vinegar, cumin, paprika, honey, (and carrot, and zucchini) in a saucepan and gently simmer until heated through and liquid is reduced.
3. Mash the avocado and lime juice, (and chilli and coriander if using).
4. Stir fry vegetables in a little oil until they are cooked through.
5. Putting it all together
Into individual bowls:
Place the salad ingredients,
Squeeze lime over each bowl of salad,
Add a spoonful of vegetables over the salad,
Add sweet potatoes to each bowl,
Add a spoonful of bean mixture,
Top with a spoonful of guacamole.
Serve with corn chips.
