A quick and easy way to serve a delicious vegan noodle lunch or dinner.
1. Cook up some noodles as per the instructions on the packet. Try buckwheat soba noodles, rice noodles, or glass/cellophane noodles for something different.
2. Make a base sauce of soy sauce, sesame oil, (4:1) and honey/agave (to taste) to stir over noodles. Add in flavours such as garlic, ginger, chilli, peanut butter or tahini. Often a little time for the cooked noodles to marinate as you prepare vegetables will enhance the flavour.
3. Add in salad vegetables - cooked for a stir fry or raw for a salad. Try julienned carrots or zucchini, capsicum, cabbage, corn, spinach, cucumber, onion, garlic, ginger, spring onions, coriander, basil or mint. To save time, use a prepared vegetable mix such as rainbow coleslaw.
4. Add in some nuts, sesame seeds, cooked tofu cubes or edamame.
5. Serve hot or cold.
