Quinoa Salad

Quinoa Salad (serves 2, small serves)

60g quinoa
1 tbs currants
1 orange
1 celery stalk
40g almonds
Baby spinach
stock
1 tsp olive oil
2 tsp balsamic vinegar

  1. Rinse quinoa in a fine sieve under cold running water. Cook in a saucepan of boiling stock for 12 minutes or until just tender. Drain. Set aside to cool.
  2. Combine currants, orange, celery and almonds in a large bowl. Add quinoa and using a fork, stir to combine.
  3. Whisk together oil and vinegar in a small jug. Add to quinoa and stir through.
